Smokey Chipotle Sauce for Meatballs

Ingredients

1 cup vegetable oil
2 2/3 tablespoons jalapeno pepper, grated
1 cup onion, grated
1/2 cup garlic paste
1 cup chipotle in adobo puree
1/4 cup ancho chili puree
1 tablespoon cumin
1 tablespoon Mexican oregano
3 tablespoons salt
fresh lime juice, from 6 limes
1/2 cup dark brown sugar, packed
1 tablespoon Kitchen Bouquet
12 cups Red Gold Crushed Ground Tomatoes

Instructions

Heat oil in a sauce pot over medium heat. Add the grated jalapeno pepper and onion, and cook together on medium heat for about 5 minutes until onions are soft. Add in the garlic paste. Cook an additional 1 minute.
Add the chipotle in adobo puree, ancho chili puree, cumin, oregano, salt, lime juice and brown sugar. Cook for 1 minute. Add kitchen bouquet and Red Gold Crushed Ground Tomatoes. Bring to a simmer and cook for 10 minutes. Add the meatballs. Simmer meatballs for 10 minutes until hot. Serve with warm flour tortillas or steamed rice.
